One day, not so long ago, I decided----well, my kidney doctor suggested that I go almost vegetarian. My poor little kidneys are struggling to function properly and one of the things I could do to cut them some slack was cut waaay back on red meat. In my journey to find dishes that would satisfy my sweet TEETH I ran across a recipe for lentil cookies. A legume in MY cookie? Was the author of this recipe insane?!
